Fig Oatmeal Bars

I escaped to the mountains. An end of summer restlessness has been holding me close the last few weeks, and I needed an escape before the school year started up again. A breath of fresh mountain air and a few handfuls of ripe mountain cherries felt like the cure.  As someone who organizes the minute details of daily life, purchasing two last minute plane tickets to the foothills of the Rocky Mountains was not in the plan, but I am trying to teach myself that life doesn't need to be so scripted. 

When we reached the mountains, we hiked away from routine and took a step into the unfamiliar. We walked along a well trodden path only a few feet wide for miles, a ledge on one side and a rock face on the other. We filled our hands with cold running water from glacial runoff, drinking deeply.  We rested on boulders as large as cars, feeling the sharpness of the sun's warmth at high altitude. We were privy to an impromptu guided tour from a mountain goat, who preferred the ease of the path to the steepness of the cliffs.

The view was the greatest of nature's design, of distant snow-topped peaks, of deep forested valleys, of wildflowers within an arm's reach. We stopped for lunch on the top of the world, sitting in silence and eating our way through PB & J sandwiches and fig oatmeal bars. Some moments, I've found, need few words.

Fig Oatmeal Bars make for a sweet, filling snack. Fresh figs are cooked down with brown sugar into a compote and subtly flavored with balsamic vinegar and vanilla. The compote is spread over an oatmeal base and baked until golden. The bars cut beautifully and hold together well without breaking apart or leaving crumbs everywhere. These bars are perfect for packing for a snack on the go and eating wherever life leads you.

Fig Oatmeal Bars

Yields 8 x 8-inch pan

Fig Compote
1 lb (450 grams) ripe figs, coarsely chopped
1/2 cup (100 grams) brown sugar, packed
2 teaspoons balsamic vinegar (optional)
1 teaspoon vanilla extract

Oatmeal Base
1/3 cup (70 grams) coconut oil, liquid state
1/2 cup (100 grams) brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1  cup (120 grams) all-purpose flour
1 1/2 cups (135 grams) old fashioned oats
1/2 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt

In a large saucepan, bring the chopped figs and brown sugar to a boil over medium-high heat. There is no need to add liquids because the figs will release a considerable amount of juice. Reduce heat to low and simmer for 15-20 minutes, or until figs soften and compote thickens. Remove from heat and set aside. 

Preheat oven to 350 degrees F (180 degrees C). Lightly grease an 8 x 8-inch pan.

In a large mixing bowl, stir together coconut oil and brown sugar until uniform. Add the egg and vanilla, mixing until blended. Stir in the flour, oats, cinnamon, baking soda, and salt. The batter will be slightly sticky. Using greased hands, press 2/3 of the dough into the bottom of the prepared pan. Spread fig compote evenly over the top. Sprinkle the remaining 1/3 of the dough evenly on top.

Bake for 25-30 minutes, or until lightly browned. Allow to cool slightly in the pan before serving.

he reminds me, digging a fork into whatever dessert I have dismissed. And he is right.

Since the coffee cake revelation of last year, my goal has been to soften my ideas of perfection. More recipes have been shared and fewer have been hidden from view. This approach hasn't been without its challenges, though. I still feel the uncertainty of whether something is exceptional enough to bring into your kitchen. Know your audience, I tell my students. How well do I know mine?

These blueberry oat bars were inspired by a strawberry bar of a similar nature from years past. I pulled them together on a cool Saturday morning, but when they came out of the oven, I hesitated. The jam had bled into the oats, dying them a dark shade of green; the oats had browned unevenly. The decision was made. Do you want a bite? I called to my boyfriend, rejecting the bars on looks alone. They are still warm. 

As any food blogger can tell you, once the fork reaches the pan, the opportunity for photography has fallen away. I took a forkful. Two. Three. I cut myself a square and was mid-bite when my boyfriend reached the kitchen. I am pretty sure this is the best thing I have ever eaten, I said between mouthfuls. I need to photograph these. 

I whisked the bars away before he could get a bite.

The taste easily makes up for whatever these bars may lack in looks. To create them, a layer of fruit preserves is sandwiched between an oatmeal crust. The texture is that of a chocolate chip cookie, hot and gooey from the oven (and it retains this texture for several days). The jam gives the bars a richness reminiscent of fudgea little will go a long way when it comes to this dessert.

Since the fruit is the focus, use a high quality fruit preserve or jam (bonus if it has fruit pieces!). Homemade or store bought will work equally well so don't think or worry you are "cheating" if you take the easy way out.

Blueberry Oat Bars (gluten-free!) are simple to make and a joy to eat. An oatmeal crustmade from oats, coconut oil, and brown sugarforms the base of the bars. A thick layer of fruit preserves are spread on top before baking and caramelizing in the oven. The bars are chewy on the edges, gooey in the middle, and very difficult to ignore.

Blueberry Oat Bars

Yields 16 servings

1/3 cup (70 grams) coconut oil, solid state
1/2 cup (100 grams) brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1  cup (90 grams) oat flour*/**
1 1/2 cups (135 grams) old fashioned oats**
1 tablespoon chia seeds (optional)
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup (~300 grams) fruit preserves or jam (I used blueberry fruit preserves)

Preheat oven to 350 degrees F (180 degrees C). Lightly grease an 8x8-inch pan.

In a large mixing bowl, mix together coconut oil and brown sugar until uniform. Add the egg and vanilla, mixing until blended. Stir in the oat flour, oats, chia seeds, baking soda, and salt. Batter will be slightly sticky. Using greased hands, press 3/4 of the batter into the bottom of the prepared pan. Spread preserves or jam evenly over the top. Crumble the remaining 1/4 of the batter evenly on top.

Bake for 25-30 minutes, or until lightly browned. Allow to cool slightly in pan before serving.

* To make oat flour, place old fashioned oats in a food processor and process until oats are a fine powder.

** To make gluten-free, use gluten-free rolled oats.

Today, I'm bringing a classic British treat to your screens (and hopefully, kitchens!). Flapjacks.

Over here, a flapjack is a well-loved, simple granola bar-esque treat. They're loaded with butter and oats, as well as golden syrup. They're basically the best application of golden syrup in baking that I've ever found. That unique caramelised flavour translates so well to the final bar, and provides a brilliantly chewy texture. Of course, it can be easily substituted for another liquidy sweetener like honey or agave syrup, with excellent results too!

A few years ago, my brother went through a phase of baking chocolate chip flapjacks EVERY SINGLE WEEK. I mean, of course I love them (it's butter, sugar and oats. Only crazy people wouldn't love that) but eventually got tired of their richness.

In an effort to cut that richness and make them a bit more, ummm, healthy.... I've found my own perfect version of flapjacks. There's less added sugar in the oat part, coconut oil in place of some butter, and a gooey date ribbon running through them. (Oh, and there's a good pinch of Maldon salt in them too. Salty-sweet is my jam.)

The smell alone of these when they're baking will be enough to draw everyone into the kitchen. They're that good. And hey, you could probably pass them off as a healthy granola bar and no one would ever judge you for eating 4 of them in one go (that totally didn't happen. But also, it actually did.)
